We're going small intentionally. Through exclusive seasonal drops, we're able to focus on what we do best: creating extraordinary bonbons with premium single-origin cacao and unexpected flavor profiles. Each limited release is a celebration of artisan quality and Texas-inspired boldness.

This artisan approach allows us to maintain the highest standards while we plan for the future. As we grow, we're working toward a new kitchen that will expand our capacity—but never at the expense of the quality and care that defines every piece we make.

With over 10 years of chocolate expertise, Jess Morrisey brings a wealth of knowledge and passion to every bonbon we create. As the former Head of Production at Chocolaterie Tessa, she honed her craft at one of the finest chocolatiers in the country.

Jess's technical mastery and creative vision are the heart of Cocoa Coyote. She's the reason our chocolate tastes just as extraordinary as it did at Golden Eye Chocolates—and the driving force behind our commitment to innovation, quality, and artisan excellence.
